Scratch 55, Double IPA
Beef and mushroom pasty with herbed sriracha cream
Flaky pastry filled with shredded roast chuck and beef demi-glace, and wild Pennsylvania mushrooms, savory whipped cream infused with rosemary, sage and sriracha. Baked and served with a garnish of flash fried sage.

Scratch 50, Belgian Double
Pistachio crusted lamb pops with wild cherry and chili gelèe
French lamb racks, flash marinated with Scratch 50. Crusted with ground pistachio and oats, seared and baked to medium, rested, sliced into pops, with a stiff house made jelly of cherries and shaved chilies. Served atop a small bed of mixed micro greens.

Dream Weaver Wheat
Fillet of Walleye on a bed of sautéed leeks with a Dream Weaver aioli.
Walleye seared from skin side only, well seasoned. Leeks sautéed with butter, salt, pepper, thinly sliced garlic and scallions.

Scratch 52, T2 Hoppy Amber
Brussles sprouts, arugula and roasted beets salad, T2 vinaigrette, parmesan crisp and a quail egg.
Red beets roasted with olive oil, salt and pepper then chilled. Brussles sprouts peeled, fried then seasoned. T2 vinaigrette sweetened with honey. Parmesan baked into crisps. Topped with quail egg.

Java Head Stout
Chocolate donut, Java Head custard, chocolate cookie and espresso bean crunch, powdered sugar.

Blue Ribbon Bacon Tour

Nearly a hundred fans of bacon gathered on Saturday, September 26, 2009 to celebrate our favorite smoky treat. Some like it more than others, like our bacon eating contest winner who consumed three pounds of bacon in just under three minutes, then continued to eat! Congratulations! Everyone's a winner!
